Paizano’s has been open for one entire year now, and honestly, I feel like it’s been more like five years. It’s amazing how much we’ve learned in these past 12-months, and how routine everything has become.
Knowing our regular customers by name, what they order, or even what days to expect them. Preparing for the High School lunches, and having them go by easily instead of frantically. Trusting our kitchen manager to do the food orders and to get us the best deal (by checking prices side by side of our two main vendors). Getting home at a decent hour, and also being able to sleep in a couple of times a week.
Running a restaurant is hard work, no doubt. We’re open 7-days a week and we put in a lot of hours during, before, and after our “posted” hours.
I don’t know that we could pull it off if we had kids. Maybe if we were a Breakfast-only or a Lunch-only eaterie, but to be open 10 to 12 hours a day is a bit too much to balance work / family.
Don’t worry — the dogs aren’t suffering. Whitey is very good about making sure that they’re walked every day, or taken to the park to play frisbee. They get a good wrestle session in a couple of times a day as well, as proven by the huge welt on Whitey’s eye yesterday. Wrestling with the rottweiler tends to leave a few scratches and bruises.
So. Back to our 1-year anniversary.
I just read my blog entries from a year ago, and can easily recall how exhausted we were and how frustrated I was with everything not running so smoothly.
