We were slammed last night. One of our regular couples walked in, looked around, and walked out. They like their peace and quiet, and our dining room was anything but quiet.
It was LOUD and rockin’!
We had mass to-go and delivery orders on top of everything else, and at one point in the kitchen we ran out of room on the ticket rail (where the orders are tacked up above the make line). The young man standing next to me on the line did an amazing job, whipping out orders, catching mistakes before they left the kitchen, quoting times on orders like a pro. I did my best to let him lead; he’ll be doing it while we’re gone, so best to let him get his feet wet before he’s hung out to dry. Next week is the state basketball tournaments, typically one of our busiest weeks of the year, and we’ll be gone.
I’ve got a lot to do today. Pack everything, get the cooler ready, make keys for the housesitter (and make sure they work!), fill up the truck with gas, pay every bill I can find, and then go to work to make perfect pies.
I’m getting excited.
